An healthy omelette

I wanted give the omelette an healthy makeover for my husband. I think twice before giving an egg to him as he is on a diabetic diet. An egg yolk contains a high amount of cholesterol and saturated fat according to about.com, whereas an egg white contains no cholesterol. As I wanted to make a light and healthy omelette, I omitted the egg yolks. The omelette without the yolk is not very filling so I substituted chickpea flour(besan) for the yolk. Chickpeas in any form is healthy and keeps hunger at bay longer as it has more fiber.

Healthy omelette

Ingredients

2 egg whites
1 1/2 tbsp of chickpea flour(besan)
Half a onion diced
Dry red chilli flakes (You can substitute coarsely ground black pepper or diced green chillies)
Salt to taste


Separate the egg white from the yolk. Add a tbsp of water to chickpea flour and form a paste. Add this paste along with onions, chilli flakes and salt to the egg white. Using a whisk or spoon mix it thoroughly without any lumps. Spray a fry pan with cooking spray. Pour this mixture into the pan and swirl till it spreads a little.
Cook for 1 min and gently flip and cook the other side for 1 more min. Serve immediately.
