Snack Attack - Roasted potato and portobello mushrooms

The munchies set on me. I opened the fridge but could not find any munchable food. Therefore, I set out to make it myself. I loooove roasted portobello mushrooms. It has a nice earthy taste and a meaty texture. Now to add something extra I threw in some potatoes. Here comes the recipe for the people who have got the munchies....


Ingredients(Serves 2)
1 large potato, with skin, chopped into bite-sized pieces
3 medium/2 large portobello mushrooms chopped into bite-sized pieces
2 tbsp olive oil
1 tsp paprika
Salt to taste



Roasted veggies straight from the oven

Preheat the oven to 160° fan/180°C. Slightly grease the tray with non-stick cooking spray. Mix a tbsp of olive oil, paprika and salt with the potatoes. In a separate bowl mix the remaining oil, salt and portobello mushrooms. Toss until well combined. Arrange everything on a baking tray. Pop it into the oven, roast for 20 mins and enjoy.

Use the best olive oil you can lay your hands on. This is much better than French fries as it has got a lot less fat than the fries. To save energy, make this alongside some other dish. I didn't even care to transfer it to a plate and ate it straight from the tray. Ok, did I tell you that I love roasted portobello mushrooms...?
